You’ll be personally greeted by Carlos, and as soon as you are escorted into the dining room, you will see why we are renowned for our exceptional customer service and tantalizing menu.

Carlos’ Bistro and Wine Bar showcases the formidable creativity and passion of Chef-Proprietor Carlos Echeandia. As a native of Peru, Chef Carlos infuses each classic bistro dish with a signature playful twist, much to the delight of our patrons. Each of our internationally-inspired dishes is lovingly prepared using only the finest artisanal, sustainable and organic products available. Our commitment to superior quality ingredients is evident in each bite and has firmly established Carlos’ Bistro as a local favorite in Colorado Springs.

We are famous for our fish and seafood dishes, which are decided on a day-to-day basis depending on what is fresh. These dishes range from mahi-mahi with walnut pesto swimming in a delectable red pepper buerre blanc to mussels and clams in chardonnay cream sauce topped with roasted vegetables and kale and have earned us glowing reviews and a strong repeat customer base.

With his tie draped over his shoulder and a smile on his face, Chef Carlos will check in with each guest to make sure they are enjoying their meals and having a pleasant, personalized dining experience. This hospitality and commitment to customer service has made Carlos’ Bistro a success among locals and visitors alike and has earned our restaurant a host of awards from Yelp, TripAdvisor, The Colorado Springs Independent, the Gazette and many others. Summer is hot and the air conditioning is on. For the love of God, please bring your sweater or jacket.

This November 2019, Colorado state becomes a member of the Japanese Kobe Club through Lombardi Brothers Meats, Denver, Colorado. Carlos Bistro will be the first restaurant in the state to offer it…enjoy.

Early Bird Dinner not available during the month of December.
